COASTAL WHITE 2023
Alcohol: 12.5% | Residual Sugar: 2.5 | Ph: 3.29
Winemaking: Albarino and chardonnay from Maldonado and a hint of pinot grigio from canelones make up the first 2018 coast white. In 2019, an expressive verdejo from our canelones vineyards was incorporated into the blend. Harvested in the early hours of the morning so as not lose its aromatic potential to the heat. Only the highest quality first-pressed juices are used. Fermented with selected yeast in a stainless steel tank at low temperatures of 57 - 61ºF. After fermentation, it is aged on fine lees for 2 to 4 months in the same tanks, to provide more roundness and vitality.
Tasting notes: Don Pascual Coast white has a delicate pale yellow color with a greenish hue. The blend of varieties, influenced by the Atlantic Ocean and the expansive “Plata” Estuary, gives us an intense, vibrant, saline wine with citrus freshness, notes of white fruits, and aromas of undergrowth. A round, ample palate with a persistent finish owed to its freshness.
RED BLEND 2021
Composition & Winemaking: The best cabernet sauvignon, Cabernet Franc, Marselan, Tannat and merlot of the year are present in this blend. The vinification process is just as rigorous as with other don pascual wines: analysis of samples from the vineyard, berry tasting, cluster selection, grape by grape selction after destemming, and maceration before and after fermentation at 71 - 83ºF. What gives a wine from the millennials’ line its distinctive character occurs at the time of tasting to define the blend: at this point, juanico’s enologist select wines characterized by a very high and fruity aromatic intensity and by a soft and refreshing palate as well, to offer a light, friendly and easy to drink wine. 15% of the wine is aged for 3 months in oak barrels for a hint of smoothness.
Tasting notes: Don Pascual Red Blend has an intense red color with violet hues. This wine surprises on the nose with its intense and refreshing bouquet of fruity notes ( cherry, strawberry, raspberry, blackberry, cassis ) supported by subtle aromas of flowers such as violet and peony. Red Blend intermingles roundness, sweetness, and freshness on the palate from attack to finish, resulting in a seductive tension.
COASTAL TANNAT 2022

Winemaking: The tannat grape used to make this wine comes from coastal vineyards in san jose, Canelones and Maldonado, located less than 30km from the sea. During the maturation of the grapes, we seek freshness and sweet tannins. The winemaking is based on modern techniques we developed specifically to prioritze the extraction from the skin, where the maritime effects are more pronounced. This also results in less extraction from the seeds, avoiding hard tannins and achieving a silky wine even when young, combining energy and roundness.
Tasting notes: A Revolutionary Tannat that highlights intense notes of fruit, pronounced floral and saline character enveloped by refined tannins unfolding in an amiable, silky finish.
